Based upon the premise that fewer is better, the International School of Baking teaches rigorous classes to one or two students who work in a hands-on environment with the instructor. Students may choose one of the popular classes designed to offer a wide spectrum of baking knowledge or participate in a class custom-designed to meet the student's needs. Not only can the classes be customized, but the dates are made to fit the student's requirements on a first come, first serve basis.
Marda Stoliar is the Director of the International School of Baking and the chief instructor. For ten years, Marda has been active as a baking consultant and teacher in China, Macau and Hong Kong for the U.S. Wheat Associates, Washington D.C. In Asia her work is predominantly with professional bakers and educators. Marda has been teaching French cooking, pastries and bread baking since 1965 where she started in New York City. "Breads of France" bakery was a piece of Paris that Marda and David Stoliar brought to Bend, Oregon. The Boulangerie and patisserie was a tremendous success in many ways, one of them was as a training facility for exceptional French bakers and pastry chefs.
International School of Baking classes are held in the school's small but very modern baking facility. Taste testing, critiquing and gourmet lunches are a part of every day's full schedule.
