Slow Food - 10-Week Master Italian Cooking Program & 2-Week Themed Courses

  The Slow Food-Master Italian Cooking Program, conducted in Jesi, Italy, since January, 2003, is an exclusive 10-week course for food industry professionals who want to learn authentic Italian food preparation techniques. The course is taught by 50 experts from Italy's 20 regions appointed by Slow Food to teach artisanal methods of food preparation unique to their region. At the end of the 10-week course, each student has the option of remaining in Italy to perform a stage (externship) for 4 or 8 months in one or more restaurants selected by Slow Food.

This comprehensive program offers an intense curriculum combined with an opportunity for additional professional training, along with ingredient, product and wine tastings, gastronomic excursions, and much more, all under the guidance of the Slow Food mission - the preservation of artisanal methods of food production worldwide.

Attendance is limited to 15 professionals per session and only 2/3 sessions are conducted each year, making this a unique, personalized culinary educational program designed to reveal the rich mosaic of Italian gastronomy traditions and culture.

This initiative has been created in a cooperative effort between Slow Food and Italian Government Authorities as a not-for-profit endeavor to promote the understanding of Italian culture, products and culinary traditions. All fees are used in support of program development and execution and are backed by Slow Food's commitment to ensure a program of unsurpassed quality.
